Oatmeal Sandwich Cream Filled Cookies

Wow! These are incredible!! Try chilling them in the refrigerator for an extra sweet treat.

3/4 cup shortening
1 cup sugar
1 cup packed brown sugar
1 egg
1/4 cup water
1 tsp vanilla extract
1 1/2 cups self-rising flour
1 tsp baking soda
1 tsp ground cinnamon
3 cups quick cooking oats
3/4 cup raisins

1/2 cup butter, softened
1/2 cup shortening
3 3/4 cups confectioners’ sugar
2 tbsp milk
1 tsp vanilla extract

1. in a large bowl cream shortening and suagrs until light and fluffy.
2. Beat in egg, water, and vanilla.
3. Combine flour, baking soda and cinnamon and gradually add to creamed mixture and mix well.
4. Stir in oats and raisins.
5. Drop by tablespoonfuls about 3 inches apart onto parchment covered pan.
6. Flatten with your palm.
7. Bake at 325 for 13-14 minutes.
8. Remove to wire racks to cool.
9. For the filling, combine all filling ingredients (butter, shortening, confectioners’ sugar, milk, and vanilla) and beat until smooth.
10. Spead on the bottoms of half of the cookies and top with remaining cookies.
